Easiest Spaghetti Dinner-Guest Chef & Giveaway

Sunday at dinner I asked who was cooking which days this week and all I heard was “cricket cricket”.  So I said I will cook Monday…and their response was “are you serious, you really want us to cook”.  Well hello why else would I have said anything?!?!  Little lovely mini me volunteered for Tuesday and Wednesday, and mr. loves volunteered for….”uhhh I have to check my schedule”.  So to save him I went ahead and volunteered to cook Thursday, and Friday is usually our eat out night so that really saved him this time.  Which leaves him in charge of picking where to eat Friday night.  I hate picking where to eat!  It’s not like we have many options, which makes it even harder to pick a place.  I am trying to get my little lady in the kitchen because I think it is important that she learns how to cook.  It’s called survival skills!  I cannot tell you how many chicks I have come across that don’t know how to cook and/or simply refuse to cook.  Are you freaking kidding me?!?!  Unh unh not happening in my house!

I decided to have her as a guest here today to show her cooking skills and share her favorite recipe.  She’s not really a guest in my kitchen but she rarely cooks an entire meal from start to finish.  It’s usually just a helping hand that I get with her walking off halfway through.  She and her dad share a love for pasta that I can’t even begin to explain, but take one look at my hips and thighs and I don’t have to say a thing.  And spaghetti is a weekly meal (cooked SEVERAL different ways) in our house.  Today it was cooked Lydi’s way.

Easiest Spaghetti and Garlic Cheesy Buns

1 package of pre-cooked meatballs
1 package of thin spaghetti
1 can of spaghetti sauce
1 can of mushrooms
1/8 cup of parmesan cheese
Pampered Chef Parmesan-Garlic Seasoning
Italian Seasoning
Garlic Salt
Sesame seed hamburger buns
Kraft Italian Blend cheese
Butter (preferably, I can’t believe it’s not butter)

Pour spaghetti sauce into medium pot, add parmesan cheese, two pinches each of garlic salt, italian seasoning, and PC parmesan-garlic seasoning and stir.

Add thawed meatballs and mushrooms to sauce, stir, cover, and simmer for 15 minutes.

In a large pot boil water and add a pinch of salt.  Once water is boiling add noodles.  Boil for 12 minutes or until well cooked. 

While sauce and noodles are cooking prepare the garlic cheesy buns.  Open buns and evenly spread butter.  I prefer to use I can’t believe it’s not butter.  Very lightly sprinkle with garlic salt, PC parmesan-garlic seasoning, and parmesan cheese.  Then cut into slices. 

Lightly grease pan with spray oil and put bread on pan.  Generously top the sliced buns with Kraft Italian Blend Cheese.  Heat in toaster oven on 400 degrees for about 5 minutes.  I don’t time or measure so I can’t give you exacts so you will just have to keep an eye on the bread.

By the time you are done preparing the bread and it is in the toaster oven browning and crisping, the spaghetti noodles should be done.  Remove one noodle from the pot and throw it against the wall or kitchen cabinet.  If it sticks…it’s ready!!!  Well that’s just how we check the noodles in our house.  Lol!  Strain the noodles, place them back into the pot, and stir in a little less than a teaspoon of I can’t believe it’s not butter to keep them from sticking.  You are ready to serve and enjoy your meal.

Gary P. Nunn at Lindenau Hall

Last night we went to an event hosted by the Poor Boys Crew.  They served some good barbecue, all the fixins and some sweet tea.  After dinner we proceeded to the Lindenau Hall for some live music and dancing.

Before I proceed, let me tell you a little about this dance hall.  It once served as a schoolhouse, community center, and place of worship.  In 1901 it became a rifle club which is now used for social events. 

The first thing I noticed when I walked in is there was no running a/c in this place.  The only air was the breeze coming through the open windows and the one fan aimed at the stage to cool the band.  Anybody that knows me knows that I am one cranky little B when I get hot, and especially sweaty.  But no worries we sat near the stage, near the band, near the fan, near the window!  And despite the 85 degree weather earlier in the day, it was quite cool and breezy by night.
It was BYOB so we brought our own beverages to help keep cool and quinch our thirst.  No worries the only thing this little beer face guy was sippin on was his sippy cup milk.  But since he was sitting at my table with beer in hand making beer face I just couldn’t resist taking his pic.
We were serenaded with some Texas Country by the likes of Gary P. Nunn.  Some good shtuff!!! 

He had fans of all ages.  I happened to catch one little lady sitting beside the speaker staring at him while he sang.

He even had several prommers that came for the show after their school dance.  This pretty prom queen also happened to be celebrating her birthday, which she received a special birthday song from Mr. Gary P. Nunn!

And these even prettier ladies put their boots to use and cut a rug.  They danced all night long!  This made for good times!  It’s not like the places I once frequented, but it definitely is so much more memorable.  From what my MIL, FIL, and husband had to say it seems they had many memories of happenings in this place back in their younger days as well.  Cough cough.

By the way I shared my wine with Gary!  I can call him that because the way I see it is when you share your beverages with someone by that point you should be on first name basis.  He happened to be in mid-song when he asked if anyone in the house had some red wine.  So me being me waved my arms in the air and screamed “wooooooo”.  The drummer made eye contact and we non-verbally communicated.  He nodded and then I pointed to the bottle, he nodded again, and then I nodded back.  In all that non-verbal communication with head and hand gestures what was said was Gary would like a glass, I said are you serious, he said yes, I said okay.  So I poured him a glass, showed it to him, and left it on stage for him.  I have the signed bottle as proof!!!

Lady Bits – Visit 1

OMGreatness!!!  When I say it was a day…I mean it was A day!!!  This post is very personal and may be too detailed for some readers.  If you are sensitive and/or easily offended, please do not read past this point.  It is probably TMI, but I am sharing because I am miles and miles from my mom, sister, aunts, cousins, or girlfriends so in my little online world you are my support group…sooo here you have it!

Today was my first visit with my lady bit doctor…not the first time in my life but here in the sticks.  Not only was it my first visit here in town, but to top it off he was a male.  Oh, but wait it doesn’t stop there!  I found out yesterday, the day before my scheduled visit, we work out together!  Pardon my fancy words, but freaking A!  This is so my luck!!!  The one thing that kept me from cancelling is that he comes HIGHLY recommended.  And to put it out there so you know my lady parts are broken.  I was told by my last doc in the big city that my chances of conceiving are like winning the lottery.  REALLY?!?! 

Today I was so over the moon nervous.  I was sweaty, shaky, nauseous, dehydrated, I couldn’t eat, I kept rocking my leg, I was just freaking nervous as heck! My blood pressure even told them so.  The nurse tells me there is nothing to worry about that he is one of the best doctors and she is sincere.  So I lay there on the bed with thoughts of me on a beach.
This is the view as I lay on the bed waiting for the doctor to come in.  Don’t worry it was just a visit, not a pap “party”, as he called it.  Lol!  Oh but if he thought he was funny I had one even better.  I introduce myself with my name and proceed to tell him I like nice long walks on the beach, my favorite color is pink and red, I love cheeseburgers, and I’m nervous.  Why did I say all that?  Because if he is going to be checking out my lady bits he needs to get to know me.  We need to be on that level.  He got a kick out of all that.  Thankfully it was just a get to know me visit. 

I was diagnosed with adenomyosis and endometriosis a couple of years ago, and have hypothyroidism.  All of these ailments=hard time conceiving.  But he said he is going to fix me right up, just not yet.  He doesn’t disagree that I am broken, but is sure I can be fixed.  In the meantime I was given a few samples of prenatals vitamins to try out so I could start on the right track. 

I can say it was a great visit!!!  I left there with a little skip in my step knowing that maybe this can happen.  And mr. loves was just as happy!

My other point of this post is to tell my lady followers to take care of yourself.  Don’t ignore happenings with your body.  Don’t put off visits for fear of the unknown or the known that you choose to ignore in hopes that it will get better all on it’s own.  I have known for years and years about my -myosis issues but chose not to deal with them and here I am today.

I will keep you posted!!!  Until then take care of yourself!!  Get your regular checkups.  Do your research.  Follow doctors orders.  Eat healthy.  Exercise regularly.  Keep in touch with loved ones and keep them informed.

Sweet Man of Mine…

Sunday while doing our weekly grocery shopping mr. loves made his way to the adult beverage section…wine to be exact.  He asked the lady working in that area for a good sangria.  She recommended Messina Hoff Sweet Sangria.  All the while I am standing in the background with a puzzled, where did that come from look (or as my sister calls it botox face).  Not that he hasn’t bought me wine many times before, but for whatever reason over the past year or so we have stopped consuming the oh so delicious, and healthy (according to some studies and doctor recommendations) glass of wine…or two, or oh we finished the bottle.  Our adult beverage intake has decreased to special occasions, and our special occasion outings have decreased to oh maybe a handful of times a year, but even then we have been passing on joining in the celebratory beverages.  I know sister you are just pounding your head on your desk as you read this saying “oh geez you old fart”.  Lol!!!  She tells me this quite often.

Today was, in short, a day!!!  Mr. Loves had a so so day and I had one big honkin’ heckuva day!!!  He made it oh so much better with his romantic and spontaneous gesture.  While I was cooking dinner, washing dishes in between stirring, and starting a load of laundry mr. loves pulled out the bottle of sangria he bought Sunday, a glass for me, and a glass for him. 

You might wonder how is it spontaneous if I was there when he bought it, but the thing is he buys wine for me occasionally and we keep them in the cabinet to gift or share with guests (whenever we do have people over…once upon a time that was EVERY weekend).  I expected this sangria to be the same, I even thought it was a gift for my sangria buddy (you know who you are starts with R and ends with A).  LOL!!!

I am thankful today for his timeless spontaneity!!!  I guess that man of mine can be sweet when he wants to be.  He is just as sweet as that sangria, if not sweeter!!!

They Don’t Make Houses Like That Anymore…

Let me begin by saying I am sooo sorry I haven’t posted in a while.   I have been working on a photography class as well as a couple of other classes and some top secret projects which I hope to share with you in the future.  I should be documenting my progress in my photo-taking skills, but man where does the time go?!?! 

Oma and Opa went out of town for a couple of days.  Opa had to go get the old ticker checked and Oma had some dog grooming and shopping to get done.  You know we’z country folk have to travel over yonder to do them sorts of things.  In their absence the loveslovesloves fam went out to feed the cows!!!  Of course it wouldn’t be a day if my group didn’t act up or pick on mom while performing chores.

And yes, they really were trying to spray me…camera and all.  That’s just how they roll.  And I yell…”hey guys! you better not spray me! the water goes in the trough not on mom and the camera!!!”

While mr. love and little love were messing around these two little ladies were wondering what the world those crazy people were doing with their water…and why they were trying to splash that nice young lady taking their pictures.

They were saying just wait ’til Opa finds out what you are doing.  I’m gonna tell on you.

They are growing to be so big and pretty!!! 

On our way back to the house we came across mr. loves old tree house. 

The first thing out of Lydi’s mouth was “dad why haven’t you built me one of these in our backyard”.  We all stood there admiring it in all it’s cuteness.   They don’t build houses like that anymore!!!  And to think that handsome man of mine once occupied it.  I bet he was a cute little guy!  I’m sure he got into all kinds of shtuff!!!  Yes I said it mr. loves “YOU GOT INTO ALL KINDS OF SH-TUFF!!!”. 

So then I start to wonder do kids still make tree houses, or forts, or castles, or play houses like we used to.  Every kid has to have some sort of playhouse!!!  I remember a little girl that lived across the street from my dad’s house had a nice little playhouse…I think it even had an a/c unit in it.  That was some fancy stuff in my day!!!

Easier Tres Leches (Three Milk) Cake…

He is kind, hardworking, husband to my lovely MIL, thoughtful, selfless, mechanic, caring, strong, Vietnam Veteran, loving, patient, wise, father to two wonderful boys, gracious, hardworking (I know I said it twice but he really is!)…
He is everything that equals Great!!!

My wonderful FIL’s birthday was last week.  Happy 21st Birthday Opa!!!

He is always talking about how much he loves Tres Leches cake.  So I did what any sweet daughter would do…I made him one!!!  Now as much as I would love to say I made it from scratch…I DIDN’T!!!  But let me tell you it tasted just as good!  Ask him (don’t worry FIL I won’t tell them you ate three pieces).    

I know how busy all of you are!  so I decided to give you a tasty recipe that is quick and easy.  It’s so quick and easy that in my five loads of laundry, house cleaning, cooking, and running errands I still managed to get all that done along with his birthday cake…all before dinner! 

Mr. Loves absolutely cringes at the words Tres Leches.  But because it was his papa’s birfday and his lovely wife slaved  making this cake…I can tell you he ate it and he liked it.  Now I know I tell my group all the time “you will eat it and you will like it and that’s final!!!” he genuinely liked it!  So for all you Tres Leches haters…give this one a try.  Oh but there is a secret ingredient that I use so that could be the other reason he liked it.  I will think about sharing it with you…until then here is the recipe. 

Easier Tres Leches

1 box of white or french vanilla cake mix
1 cup of milk
1 can condensed milk
1 can evaporated milk
1 box of vanilla pudding mix
1 container of whipped topping
1 jar of strawberry fruit spread/strawberry topping (optional)

Prepare cake mix according to box directions. 

Mix pudding according to speed-set method.  Then add whipped topping to pudding mixture.  Refrigerate while cake is cooling. 

In Pampered Chef Classic Batter Bowl mix together the evaporated milk, condensed milk, and whole milk.  Above is a picture of the three milks in the bowl before I mixed them.  Pretty neat!!!
I guess I can share my secret ingredient with you…

Add 1/8 cup of Vanilla Caramel creamer…I don’t usually measure so I’m guessing on how much I added.  It wasn’t much just enough to give it a little more flavor.  I know it’s a tres leches (translating three milks) but I had to do something so my group would consume this with Opa on his birthday…and it worked!!!

Once the cake is completely cooled poke holes all the way to the bottom of the pan throughout the cake with a fork or skewer.  You can always just do what I did…cut off the very top of the cake so it really soaks up the milk mixture.  Pour the milk mixture evenly over the top of the cake, be sure to pour along the edges and corners as well so the cake absorbs the milk mixture from the bottom of the pan too.

If you opt for strawberry topping, spoon over top of the cake and lightly spread.  I used the Pampered Chef Easy Accent Decorator to spread a thick layer of the whipped/pudding mixture over the top of the cake. 

Cover the cake and chill in the refrigerator for two hours or more.

Oh my greatness!!!!  My mouth is watering just looking at this picture. 

Note:  If you want to make things a little easier you can use already prepared angel food cake.  This is just as yummy!  And a tad bit healthier!

Bootcamp – Week 5

This past week was really hard for me.  And I’m not talking about the workout…well that was hard too, but his week was hard for me because I did NOTHING!!!  No gain, no loss.  Last weekend the Loveslovesloves family went out of town and I TOTALLY splurged (I get one cheat meal)!!!  We went to PF Changs…oh how I love that place! 

Husband and I had a dinner for two meal.  It came with soup, an appetizer, two entrees, and two desserts.  Oh how yummy it was!!!  He let’s me order whatever I want off the menu becuase he was blessed with some good metabolism and doesn’t think of what’s going into his belly (or in my case hips, thighs, and back side).  Sunday morning we went to Elmo’s and I did it again.  I had French Toast and picked off of Mr. Loves omelette.  I knew Sunday night all that food had totally ruined my hard work.  I felt every bit of it!!! 

So first thing Monday morning I went to boot camp and I did what any responsible workout mama cow would do…I TOLD ON MYSELF!!!  I told him becuase I felt guilty.  His response was “sometimes you need to fall off to get back to where you need to be” and “are you ready for this week”.  Man, did I fall off or what?!?!  No, I wasn’t ready.  I was very afraid.  But I wasn’t having any of that nonsense.  I worked too dang hard!  Yes, I was ready!!!  It was back to work full speed ahead for me.

I went in THREE times this week…and man did he kick my butt (so did I for telling him the truth)?!?!  Monday’s workout was the worst of them all (but that’s a good thing)!  It consisted of uphill running, uphill skipping, uphill lunges, uphill shuffle, more uphill running, and ANYTHING he could get us to do UP-freaking-HILL!!!!  Now I’m not complaining but dang that was some tough shtuff!  Tough stuff usually=good stuff. 

I have no loss to report this week, but I am happy with the direction I am headed.  Lesson of the week…DON’T OVERINDULGE ON YOUR CHEAT MEAL!!!

Mimosas and wine charms…

Thanks to my lovely sister and cousin I have found something new to take up my time.  For my bridal shower these fabulous ladies made wine glass charms for all the ladies to use on the stem of our mimosas.  Well, I loved them so much I ended up making some as Christmas gifts and gifting them to one of my girlfriends.  Since then I have had so many people requesting them I decided to set up shop and sell them. 

My favorites are the best friend wine glass charms

and the western wine glass charms.

While we are on the subject of mimosas….. how about a delicious mimosa recipe?!?!  My sister’s Sunday favorite!!!  Sister I think you will like this one!  It doesn’t require the use of that thing in your kitchen called a stove.  For all my lovies (sheloveslovesloves followers) that don’t know my sister I am not bad-mouthing her.  She truly has an allergy to the kitchen.  Okay just sometimes (maybe most of the time).  Lol!  Although…she has gotten in there to make some Cowboy Bread recently.  Maybe I can convince her to make it for a future post…cough cough Sister.  Oh and I forgot, she did make some quesadilla cups for the Super Bowl game!  Now back to the mimosa recipe. UGHHHH!!!! If only I can get my darling husband to QUIT snapping pictures of me I can focus!!!!!  I have been slaving in the kitchen over dinner, doing laundry, cleaning the kitchen, playing Littlest Pet Shop Monopoly and am trying to post on my blog!!!!!  RRRRaaaaooooooaaaaarrrrrrr!!!!!!!  I am not cute at this moment!!!!  Okay once again…back to the recipe. 

Mimosa Punch
2 cans of pineapple-orange juice concentrate (thawed)
1-2 liters of club soda
1-2 bottles of chilled champagne

In large punch bowl or pitcher mix together the thawed pineapple-orange juice concentrate and club soda.  Stir in champagne.  Serve and enjoy!!!!

Note:  I use the Pampered Chef Family Size Quick Stir Pitcher because it has a plunger that you can use to mix the contents.  So much easier!  And it holds a whole lot more!  😉

Bootcamp – Week 4

 Yay!!! Week 4 has come and gone!  And let me tell you I felt EVERY bit of it.  Bootcamp is twice a week for me.  I missed last Monday (sick dog) and Thursday (sick princess), but was back on full speed ahead this week.  I have been fighting a cold or whatever it is that was trying to bring me down since last Saturday, but I didn’t let that get in the way.  I hit the gym hard this week!!!  I even went in an extra day to make up for missing last week.  And I think working out helped me to get rid of whatever bug was trying to take over me. 

I am happy to report that I have lost a total of…wait for it….are you ready….I’M SO EXCITED!!!!  9 BIG FREAKING POUNDS!!!!!  I didn’t have my measurements done before boot camp started but let me tell you I know I have lost a little something.

It has not been easy I have had to change my eating habits.  And we all know I love me some good food, especially the stuff that goes straight to my thighs! (Isaac if you are reading this please don’t hold it against me in boot camp.)  I have passed on the adult beverages lately including wine, x-rated margaritas (GP!!! you B), and just anything with x-rated in it (my current fave).  And as much as I would love to sit on the sofa in my sleep shirt and watch movies I make my way to the gym for some hard work, sweat, and all that stuff healthy living is made of…in my case what bikinis are made of. 

My current goal is to get out of my swimdress (not me in this picture by the way but yes this is my current swim attire).

and back into a bikini this summer.  
I have set this goal for myself and I am super motivated and dedicated to making this happen.  I now have the trainer chanting with me “BEAUTY IS PAIN, PAIN IS BEAUTY” and “THIS IS WHAT THAT BIKINI IS MADE OF” as he pushes me along to finish that last rep or run one more long stop.  This may not be your goal, but it is mine!  And I hope that this will motivate you to set your goals and MAKE THEM HAPPEN!  Don’t be one of those new year’s resolutioners!  Aim for healthy living year round.  It doesn’t have to be anything drastic, but set a goal and make the changes necessary to achieve that goal.  I am proof that with changes, self-discipline, motivation, and dedication it can happen.

Healthified recipe for today is from Pampered Chef Season’s Best Recipe Collection.  I love love love cheeseburgers!!!!! but with my recent goals I have had to cut those out.  I have found a recipe that is just as good as a cheeseburger but a little healthier.  Each serving is 250 calories.  I have put in parenthesis below what you can use to substitute. 
Deluxe Cheeseburger Salad
4 sesame seed hamburger bun tops (wheat tops)
1 small red onion
2 plum tomatoes
¾ lb 95% lean ground beef (ground turkey)
½ cup sliced dill pickles
½ cup ketchup
1 tbsp yellow mustard
8 cups sliced romaine lettuce
1 cup shredded cheddar cheese (fat-ree/reduced fat cheddar cheese)

  1. Preheat oven to 425°F (220°C). Slice bun tops into 1/4-in. (6-mm) strips. (If bun tops are very thick, slice bottoms off horizontally before slicing into strips). Arrange in a single layer on Large Bar Pan; bake 8–10 minutes or until lightly toasted. Remove to Stackable Cooling Rack; cool completely.
  2. Cut onion in half crosswise using Utility Knife. Slice half of the onion crosswise into thin rings using Ultimate Mandoline fitted with adjustable slicing blade on thin setting. Cut tomatoes lengthwise into quarters and slice crosswise. Set onion and tomatoes aside.
  3. Cook ground beef in (8-in./20-cm) Sauté Pan over medium-high heat 5–7 minutes or until no longer pink, breaking beef into crumbles using Slotted Turner. Meanwhile, chop remaining onion half using Food Chopper. Finely dice pickles using Utility Knife. In Classic Batter Bowl, combine chopped onion, pickles, ketchup and mustard. Add cooked beef; mix well using Small Mix ‘N Scraper®.
  4. To serve, arrange lettuce on large serving platter. Spoon beef mixture over lettuce. Top with cheese, tomatoes and sliced onion. Arrange hamburger bun croutons around edge of platter. Serve immediately.

My blog is currently under construction…I have pondered and pondered on it since my last post (quite laughing at me Ambi).  Please be patient with me.  I will be back in full swing after this weekend.  The long delay is due to a date this weekend or shall I say out of town trip with Mr. Loveslovesloves.  What?!?!  A date?!?!  Out of town?!?!  I know!  It’s a rarity for mommy’s and daddy’s (especially us) so I am loving the thought of it all.  I am so excited!!!!!

Although my blog is under construction today is Thursday…boot camp update.  I will get that up here and then after that it will be some serious fiddling with customizing of this little puppy.
